Key Lime Cheesecake

This is my favorite recipe. My girls are always asking me to make it. Enjoy.
Key Lime Cheesecake


1 cup key lime juice (I use Nellie & Joe's)

1 8oz. block cream cheese (softened)

1 can sweetened condensed milk

1 pkg unflavored gelatin

2 cups heavy whipping cream

1 1/2 pkgs graham crackers

1/2 stick of butter (softened)

1/4 cup sugar

zest of 3-4 key limes (finely grated)

juice of 3-4 key limes for crust


Preheat oven to 350 degrees. Place graham crackers in zip lock plastic bag and crush to make a fine mix. Add butter, sugar and lime juice for crust and combine until it all sticks together. Press into a 9 or 10 inch springform pan, pressing about 1 inch up the sides. Turn oven off and place springform pan into over for 10-12 minutes. Remove and let cool.
Stir 1 pkg gelatin in 1/4 cup key lime juice and microwave for 10 seconds. Let cool. With mixer on medium, mix cream cheese and sweeteneded condensed milk in large bowl until smooth. Add remaining key lime juice and gelatin mixture, blend well. In separate bowl mix 2 cups of heavy whipping cream on high until stiff. Add 3/4 of whipped cream to key lime mixture and blend on medium. Fold in remaining whipped cream.
Pour mixture into spring form pan. Refrigerate for 4-6 hours (I usually refrigerate overnight). Cut and serve.

Moving out and Homecoming


I'm a little sad that my youngest daughter, Laura, has decided to spread her wings and move out. It wouldn't be so sad, except that she has moved around 250 miles away into another state to be with her boyfriend. But I know she's happy. Her boyfriend, Mike, came home today. He's been away for 7 months in the Persian Gulf on an aircraft carrier.
