A Great Summer Salad

If you love the Strawberry Poppyseed Salad from Panera Bread like I do you'll and you want to try your hand at making your own, this is a great recipe that will get you close to the original without a lot of calories.  


Poppyseed Dressing

1/3 cup white vinegar
1 cup canola oil
1/4 cup grated vidalia onion
2 tablespoons spicy brown mustard
1/2 teaspoon kosher salt
1/3 cup sugar
2 teaspoons poppy seeds


In a food processor chop/grate onion, scrape sides until it is cut up pretty fine. Add vinegar, salt sugar and mustard and pulverize until onion is very fine and ingredients are well mixed. Slowly add canola oil and mix until well blended. Add poppy seeds and mix well. Will keep well refrigerated up to a month.

Use on a salad of Romaine lettuce, strawberries, blueberries, pineapples and pecans or walnuts. Add a little fetta cheese if you like.
